Yam Noodles with Tofu and Peanuts
Healthy alternate to regular pasta!
Ingredients:

2 large yams, peeled and spiralized like noodles

1 pack Extra Firm Tofu, cubed

½ cup smooth peanut butter

¼ cup soya sauce

2 limes, take out juice

2 tablespoon honey
-
½ teaspoon red chili powder
-
1 tablespoon ginger paste
-
1 teaspoon garlic paste
-
1 tablespoon vegetable oil
-
½ cup scallions, cut
-
½ cup ready salted peanuts
-
½ cup cilantro, chopped
-
Freshly crushed black pepper
-
Freshly crushed salt
To Make the Sauce:
In a bowl, mix the peanut butter, soya sauce, lime juice, honey, red chili powder, ginger and garlic. Set aside. If the sauce is very thick, add a little hot water and mix well.
To make the tofu:
Heat the oil in a frying pan, add the cubed tofu and stir fry until golden brown and crispy. Season with salt and pepper.
To cook the yam noodles:
Preheat the oven at 400 degrees F
Place the yam noodles on a baking sheet and cook in the oven for 10 minutes. Do not overcook. They should still have a little bite in it. Remove from oven.
To assemble:
Place the cooked noodles in a serving bowl. Pour the peanut sauce and toss well.
Garnish the noodles with Tofu, crushed peanuts, cilantro and scallions.
