Vegetable Soup with Hand Made Pasta
Simple low-fat soup with elegant hand rolled pasta!
Ingredients for Soup:
- 4 cups frozen mixed vegetables (green beans, peas, carrots, lima beans and corn)
- 1 can of your favorite beans, white navy beans or red kidney beans, drained and rinsed well
- 2 tablespoon tomato paste
- 1/2 teaspoon turmeric
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garlic, minced
- 1/2 teaspoon cumin powder
- 1 tablespoon chopped fresh basil or dry basil
- ½ teaspoon black pepper
- Salt to taste
- 2 tablespoon ketchup (optional)
Ingredients for Pasta dough:
- 1/2 cup whole wheat flour
- 1/2 cup oats flour
- 1 tablespoon oil
- ½ teaspoon salt
- 1/4 cup warm water
Make the pasta dough:
Combine the wheat flour, oats flour, oil and salt. Add in the warm water a little at a time to make a firm dough (not too soft). The amount of water will vary depending on the brand of flour you are using but start with about ¼ cup. Cover and let the dough rest for 10 minutes.
Method:
While the dough is resting. Take 10 cups of water in a soup pot. Let it come to a boil. Add in the mixed vegetables, beans, tomato paste, turmeric, red chili powder, garlic, cumin, basil, ketchup, salt and pepper. Mix well. Taste for salt and seasoning. Adjust to your taste. Reduce the heat to low to allow the vegetables to cook.
Meanwhile, make the pasta. Divide the dough in two parts. Roll out the dough to 1/8 inch thickness. Cut out circles with a 2-inch diameter cookie cutter and set them on a tray. Finish making all the circles with the rest of the dough. To make the pasta, take a circle in your palm. Put four dots of water to the east, west, north and south edge. Bring the north and south dots together, then the east and west dots to the center. Pinch all four dots in the center so it creates a little flower with air pockets inside. Make all the pasta flowers and set them on the tray.
Bring the soup to a boil, and drop in the pasta flowers a few at a time. Continue adding the pasta in the boiling soup. Let the soup boil for about 5 more minutes, then reduce the heat to medium-low heat. Continue cooking for 20 more minutes till the pasta is tender. Do not cover.
Soup is ready to be served with your choice of side!
