Tostada Pizza

Fresh and healthy approach to pizza!


Ingredients for Base:

  • 1 large ready-made pizza crust of your choice

  • 1 can refried beans or black beans, drained and washed

  • 1 cup pepper jack cheese, shredded


Ingredients for toppings:

  • 2 cups iceberg lettuce, shredded

  • 2 Tomatoes, diced

  • 1 large jalapeno, deseeded and diced fine

  • ¼ corn kernels, cook in the microwave (optional)

  • 4 stems green onions, chopped fine

  • ¼ cup shredded pepper jack cheese

  • ¼ cup black olives, sliced

  • ¼ cup cilantro, chopped

Bake the ready-made pizza crust per directions on the package.
Remove from oven, spread the beans of your choice and sprinkle the top with pepper jack cheese. Bake for 10 additional minutes until the cheese has melted. Remove from oven and let it cool completely.

As soon as the crust is cooled down, add the toppings starting with lettuce, tomatoes, jalapenos, corn kernels, green onions, shredded cheese, olives and cilantro.

Drizzle with Ranch dressing, slice and ready to serve.

I suggest you make the dressing below for the drizzle. It’s worth all the trouble.

Spicy Sauce:

  • 2 tablespoons Mayonnaise or Greek yogurt

  • 2 tablespoons Sour cream

  • 2 Tablespoon Lime juice or lemon juice

  • 1 Tablespoon Honey or Agave

  • 2 Tablespoons Taco Seasoning Mix

Mix well and drizzle over the pizza.
