Penda
Quick and easy recipe for penda (milk and nut fudge). Get creative with the shapes!
Ingredients:
- 1 cup heavy whipping cream
- ¾ cup sugar
- 2 tablespoon ghee
- 1 cup almond flour (made from blanched almonds)
- 3 cup milk powder
- 1 teaspoon ground cardamom/elchi
- ½ teaspoon saffron, crushed (optional
Method:
In a saucepan, take the whipping cream, sugar and ghee and mix well. Heat the mixture on medium heat till the liquid comes to a roll boil. Lower the heat slightly and continue to boil for 2-3 more minutes. The mixture will have thickened slightly. Turn off the heat and add in the almond powder, milk powder and cardamom. Mix everything gently. Do not over mix otherwise the ghee will separate from the dough. Portion the dough in roughly 50 pieces. Roll each piece in a smooth ball. Set each ball on a tray lined with foil or plastic wrap. Make and impression of a design with your choice of tools.
I have used an old thread holder and mooncake mold for fancier designs.
