No Bake Peanut Bites
Small bites of peanut flavored treat that is perfect for morning or afternoon snack.
- 1 cup oats flour or quick cooking oats
- 1 cup peanut butter (creamy)
- 1 cup roughly chopped almonds, toasted
- 2 tablespoon flaxseed meal or powder
- 1/3 cup honey or agave
- 2 teaspoon vanilla
- 2 tablespoon ghee or coconut oil
- 1 – 1 ½ cup crispy rice cereal
On medium heat, roast the oats flour in a non-stick pan or wok for about 5-7 minutes until it is fluffy and aromatic.
Add the peanut butter, chopped almonds, flaxseed powder, honey, vanilla and ghee. Stir well till everything is combined.
Remove from heat and add in 1 cup of crispy rice cereal. Mix gently so you do not crush the cereal. Add more cereal if the mixture is still too wet.
Using a cookie scoop or a tablespoon, take a tablespoonful size of the mixture in your palm and form a ball.
Set each ball on a wax paper or parchment paper for an hour to cool down and set.
Store in an air tight container. Keeps well in the refrigerator.
Other flavor suggestions:
You can substitute the peanut butter with almond butter
You can also replace the vanilla with some ginger powder (suth). These will almost taste like peanut laddus.
