Nacho Cheese Chips Bake
Yummy and easy recipe for a light dinner!
Ingredients for sauce:
8-ounce favorite spaghetti sauce
1 can refried beans
1 tablespoon Garlic, minced
1 teaspoon ajmo (ajwain) - optional
1 teaspoon red chili powder
Ingredients for toppings:
2 cups shredded lettuce
1 green bell pepper, diced
1 cup green onions, diced
2 tomatoes, deseeded and diced
2 cups pepper jack or marble cheese, shredded
½ cup olives, sliced
½ cup fresh or pickled jalapeno
1 large bag of nacho cheese flavored chips
Preheat the oven at 350 degrees.
Prepare a baking tray or casserole dish – spray with a little cooking oil.
In a mixing bowl, take the spaghetti sauce, refried beans, garlic, ajmo and red chili powder. Mix well.
Spread half the bag of chips evenly in the tray. Take half of the sauce mixture and sprinkle evenly over the chips. Take half of all the toppings and layer them starting with lettuce, bell pepper, green onions, tomatoes, cheese, olives and jalapenos.
Take the rest of the chips and make the second layer on top just like the first layer above.
Bake in the oven for 10-12 minutes until the cheese has melted and everything is hot.
Serve immediately. Top with sour cream and guacamole (optional)
Note: The lettuce will also cook with the chips and sauce. If you don’t like the texture of cooked lettuce, please omit the lettuce as a topping.
