Mixed Vegetables with Rice and Quinoa
This dish is prepared in the oven and you can serve it many ways!
Ingredients:

2 cups Mixed vegetables (frozen)

1 cup Basmati Rice, washed

1 cup Quinoa, washed

¼ cup whole peanuts, raw (or unroasted cashews)

1 tablespoon ginger, minced

1 tablespoon green chili, minced
-
1 teaspoon garlic, minced
-
½ teaspoon Garam Masala (optional)

½ teaspoon turmeric
-
1 teaspoon salt, as per taste

2 tablespoon olive oil (optional)

4 cups water
Preheat the oven at 400 degrees F.
Grease or spray a baking dish.
Put all the ingredients in the dish. Stir well. Check for salt to taste.
Cover with foil. Poke a few holes in the foil to release the steam.
Put in the oven for 45 minutes to 1 hour.
Fluff the rice with a fork, and ready to serve with raita (recipe below)!
Ingredients for the Raita

1 cup Greek yogurt
-
½ English cucumber, grated

2 tablespoons sour cream (optional)
-
1 teaspoon green chilies, minced
-
½ teaspoon garlic, minced (optional)
-
1 teaspoon cumin (toasted and coarsely ground)

2 tablespoon cilantro, finely chopped
-
½ teaspoon salt, to taste
Mix well. Can be stored in the fridge for a few days.
Other Serving Suggestions:
In a wrap with your favorite greens and protein
Grain Bowl topped with your veggies, dressing and nuts or seeds
