Garbanzo, Fennel, Peppers and Grapes Bake
A beautifully caramelized side dish for the holidays!
Ingredients:

1 can Garbanzo beans, drained and washed

1 head Fennel, washed and thinly diced

1-pound Red Grapes, washed and stemmed

1 Red Bell Pepper, cut in ½ inch slices

1 Yellow Bell Pepper, cut in ½ inch slices

4 tablespoon Olive Oil
-
4 cloves garlic, minced
-
1 tablespoon Oregano
-
Freshly ground Salt
-
Freshly ground Pepper
Method:
Preheat the oven at 450-degree F.
Put the Garbanzo beans, Fennel, Grapes and Peppers in a baking tray. Add the garlic, oregano, salt and pepper to taste. Sprinkle with Olive Oil.
Place in the oven to roast until the vegetables are golden brown and the grapes are almost bursting. It will take approximately 30 minutes to bake. Transfer in a platter and serve warm.
