Empanadas
Pastry filled with corn and cheese, served with coleslaw and spicy sauce.
Ingredients for pastry:

3 cups all-purpose flour / plain flour / maida flour

¼ cup oil

¼ cup cold butter (grated)

2 teaspoon baking powder
-
1 teaspoon salt

1 cup cold milk
Sift the flour, baking powder and salt in a bowl. Add the oil and rub in gently. Then add the grated butter and mix in gently. Make sure the grated butter is not over mixed. Add cold milk to make the soft dough. You should be able to see the grated butter in the dough. Let it rest in the fridge.
Ingredients for filling:

4 cups frozen corn kernels (thawed)

1 cup jalapeno jack cheese, grated (or any of your favorite cheese)

½ green onions, chopped fine

½ cup cilantro, chopped

2 jalapenos, finely diced (leave seeds in for extra heat)

1 teaspoon whole jeera
-
1 teaspoon black pepper, as per taste
-
½ teaspoon salt, as per taste
Mix all the ingredients and set aside.
To Fill the pies:
Remove the dough from the fridge. Make 20 small dough balls. Roll each ball into 5-inch diameter. Place two heaped tablespoon of filling in the center. Grab top half of pastry and overlap to the other edge. Seal the edges so it becomes semi-circle pie. At the point you can pick it up and crinkle the edge by hand (as shown in photo) or leave it on the rolling board and take a fork and crinkle the edges by pressing with a fork. Place on a greased baking sheet. Repeat filling each pie. Take a kitchen scissor and slit the top of each pie. Make three or four slits. Brush each pie with milk. Bake in a 350 degree F oven for 30 minutes until the pies are golden brown.

2 cups white cabbage, shredded

2 cups red cabbage, shredded

2 carrots, peeled and grated

1 sweet onion, thinly sliced

4 tablespoon Greek yogurt
-
2 tablespoon lemon juice
-
2 tablespoon honey, or any other sweetener of your choice
-
1 teaspoon whole jeera
-
1 teaspoon black pepper, or per taste
-
1 teaspoon salt, or per taste
Toss all the ingredients in a glass bowl. Refrigerate until ready to serve.
Ingredients for spicy sauce:

1 cup Greek yogurt
-
1 teaspoon garlic, minced
-
1 tablespoon smoked paprika or red chili powder
-
1 teaspoon ground jeera powder
-
2 tablespoon lemon juice
-
2 tablespoon honey, or any other sweetener of your choice
-
1/2 teaspoon salt, per taste
Whisk all the ingredients in a bowl. Taste for salt. Keep in the fridge till ready to serve.
