Chalupa
A perfect alternate to taco or tostada!
Ingredients for the shell:

1 ½ cup self-rising flour

½ teaspoon salt (optional)

1 tablespoon vegetable oil

¾ cup warm milk
Put the flour and oil in a bowl. Mix the oil in the flour. Add half the warm milk and start mixing with your hands. Now add a little milk at a time to form a soft but pliable dough. Cover and set aside.
Ingredients for the filling:

1 can refried beans or black beans, remove and warm in a bowl

2 cups finely shredded lettuce

2 tomatoes, diced fine

4 stems green onions, diced fine

1 cup cheese, shredded (Marble Jack, Cheddar or jalapeno pepper cheese)

½ cup sliced olives
Ingredients for the sauce:

4 tablespoon mayonnaise

2 tablespoon sour cream
-
2 tablespoon lime or lemon juice
-
1 tablespoon honey or agave
-
½ teaspoon red chili powder (regular or smoked)

½ teaspoon salt, or to taste
-
½ teaspoon black pepper, or to taste

2 tablespoon water
Mix all the ingredients in a bowl till it is all combined into smooth sauce. Set aside.
To make the shells:
Divide the dough in 8 balls. Roll out each ball in 7-8 inch diameter. Take a fork and prick thru the pastry. (This will help for the pastry not to puff too much). Roll all the 8 balls and set aside.
Take a deep-frying pan and fill oil about one inch deep. Heat the oil.
Fry each round at a time on each side for about 30 seconds. Now with the help of a tong, gently fold the dough in half while it’s frying. Hold the dough in that shape with the tongs for about 30-45 seconds on each side. Roll it over in the oil and cook evenly till golden brown. The chalupa should have formed the shape of a taco shell. Remove from the oil and drain on a paper towel to absorb access oil. Repeat frying each round of dough to form a chalupa.
How to assemble the Chalupa:
Take a shell. Spread beans on the inner side of the shell. Fill the shell with lettuce, tomato, green onions, olives and cheese. Garnish with cheese and a drizzle of the sauce. Enjoy!
