Apple Sauce Mini Muffins
You will enjoy the sugar and spice flavor of these mini muffins!
Ingredients for muffin mixture:

2 cups biscuit mix, i.e. Bisquick flour

1/2 cup apple sauce

1/4 cup sugar

1/2 cup milk

2 tablespoon vegetable oil

2 tablespoon flaxseed meal

1 tablespoon yogurt
Ingredients for topping:
- 1/4 cup sugar
- 3 tablespoon butter, melted
- 1 teaspoon cinnamon powder
Preheat the oven at 350 degrees.
Combine the biscuit mix, apple sauce, sugar, milk, vegetable oil, flaxseed meal and yogurt in a bowl. The dough will be light and fluffy.
Fill greased mini pan with the mixture about two thirds full.
Bake for 12-14 minutes until golden brown.
Cool slightly to the touch, remove the muffins from the bake pan.
Mix the sugar and cinnamon for the topping in a bowl and melt the butter in another bowl.
Now dip a muffin top in the melted butter then coat with the sugar cinnamon mixture.
Repeat the process for the rest of the muffins.
[Makes 24 mini muffins]
Note:
You can substitute the flaxseed meal and yogurt in the mixture for 1 whole egg.
