Apple, Grapes and Pecan Salad
Awonderful fall salad!
Ingredients:

2 crisp Apples, cored and cut into cubes

1 cup green grapes, cut on halves or quarters

2 sticks Celery, cut diagonally

½ cup Pomegranate seeds

½ cup Pecans, roasted or with cinnamon
-
¼ cup Red Onion, thinly sliced

¼ cup Green Onion, finely chopped
Dressing:
-
¼ cup yogurt
-
1 lemon juice
-
¼ cup Olive Oil
-
1 teaspoon grainy mustard
-
2 tablespoon Honey or Agave
-
Freshly ground salt and pepper (per taste)
Method:
Take a large salad bowl. Whisk all the dressing ingredients well.
Now add the apples, grapes, celery and red onion over the dressing. Mix well till everything is coated.
Sprinkle with pomegranate seeds, pecans and green onions, then serve.
