Oven Roasted Vegetables

Healthy and easy way to prepare delicious vegetables in the oven!

Ingredients for Vegetable roast:

  • 1 yam, peeled and diced into cubes

  • 1 beetroot, peeled and diced into cubes

  • 1 small heads of broccoli, separated into florets

  • 3 red potatoes, scrubbed and diced into cubes

  • 4 tablespoon olive oil

  • 1 tablespoon dry mixed herbs

  • 1 tablespoon garlic powder

  • 1 teaspoon red chili flakes

  • Salt to taste

  • Pepper to taste

Take a large baking pan and grease it with oil.
Preheat the oven at 400 degrees F

Take a mixing bowl.
First take the yam cubes, add 1 tablespoon olive oil, ½ teaspoon of dry herbs. ½ teaspoon garlic powder, ¼ teaspoon chili flakes, salt and pepper to taste. Toss well and place in one corner of the baking sheet.

Repeat the same process for mixing each vegetable separately as above and setting it in each corner of the bake pan.
Bake for 45 minutes – 1 hour till the vegetables are cooked and a golden color appears to the potatoes. No need to cover or toss during the cooking process.

Dressing for the vegetables:

  • 4 tablespoon mayonnaise or greek yogurt

  • 2 tablespoon yellow mustard

  • 3 tablespoon honey or agave

  • 2 tablespoon lemon juice

  • ½ teaspoon red chili powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper

Mix well and drizzle as needed over the vegetables.

Serving suggestions:

  • Serve with rice or grain or your choice to complete the meal.
  • In a wrap with the vegetables and greens.
  • Serve over a bed of greens.
