Easy and simple cookies suitable for gluten free diet!
1 cup almonds, coarsely ground
½ cup cashews, coarsely ground
½ cup unsalted pistachios, coarsely ground
1 cup Milk Powder
½ cup sugar
1 teaspoon ghee (clarified butter)
¼ cup warm Milk
¼ teaspoon saffron threads or powder
1 teaspoon Cardamom powder (elchi)
Preheat the oven at 350-degree F.
Mix all the dry ingredients in a bowl. Make the dough by adding the warm milk a little at a time. Once the mixture comes together it will form a ball. Cover it and set aside for 10 minutes.
Divide the dough in two parts. Take one part and roll it out in between two plastic paper (I usually cut a large freezer bag in two pieces). Roll until ¼ inch in thickness. Remove the top plastic and cut the cookies with a cookie cutter into a shape of your choice. I used a round cookie cutter.
Set all the cut cookies on two greased baking trays. Keeping them about ½ inch apart.
Bake for 10-15 mins until they turn golden brown.
Cool and store in an airtight tin.
