Instant Lemon Pickle
Instant lemon pickle, delicious with Roti, Puri and Paratha!
1 large or 2 small Lemons
1 cup sugar
2 teaspoon salt
1 teaspoon hot chili powder
1 teaspoon Kashmiri chili powder (or Hungarian paprika)
¼ teaspoon turmeric
¼ teaspoon asafetida (hing)
Wash and quarter the lemon(s). Remove all the seeds. Place the lemon pieces in a small food processor. Pulse until it becomes a chunky pulp. Do not over process otherwise it will become a puree. You should see the tiny pieces of the lemon skin in the pulp.
Remove the pulp (should measure approximately 1 cup full) in a glass mixing bowl. Add the sugar, salt, chili powders, turmeric and asafetida (hing). Mix well and taste for desired salt.
The pickle is ready to be served! Enjoy!
Store the extra pickle in a glass jar and keep in the refrigerator.
