Asparagus Paella

Asparagus Paella

A stunning rice dish!


  • 2 cups Basmati Rice

  • 1 bunch asparagus, green spears only

  • 1 Onion, diced

  • 1 Red Bell Pepper, diced

  • 2 cups frozen mixed vegetables

  • 2 tablespoon Olive Oil

  • ¼ teaspoon turmeric

  • ½ teaspoon Paprika

  • 1 tablespoon garlic, minced

  • ¼ teaspoon Saffron threads

  • Freshly ground Salt

  • Freshly ground pepper


Preheat the oven at 350 degrees.
Take a paella pan or shallow and wide frying pan that is oven safe.
Heat the pan on the stove top, add olive oil. Add the washed rice and roast for a few minutes until the grains start turning almost white. Add the onions, bell pepper and garlic, and sauté for a few minutes until the onions are translucent. Now add the vegetables, paprika and 1 ½ cup water. As soon as the water starts boiling, add the saffron and salt and pepper to taste. Remove from heat.
Cover the pan with foil and bake in the oven for 20 minutes. After 20 minutes, remove the pan from the oven, arrange the asparagus on the rice, cover the foil and bake for 10 more minutes.
Serve hot.
